Can’t get enough of the avocado toast trend? Well here are 4 healthy ways to change up your morning protein.

1. Egg and Kale Avocado Toast:

Bread of your choice
Olive Oil
Chopped Kale
Balsamic Vinegar
Avocado
Lemon Juice
1-2 Egg(s)
Salt and Pepper to taste

Toast bread or cook on pan with olive oil and garlic. Saute kale in olive oil and salt. Add balsamic vinegar when kale begins to wilt. Cook your egg(s) how you like them. Mash avocado with fork and add salt and pepper as wanted. Put on toast, splash lemon juice (or squeeze fresh lemon), add pepper. Put on kale, then egg(s). Enjoy!

2. Harissa, Egg, and Goat Cheese Avocado Toast:

Bread of your choice
Harissa
Sun-dried tomatoes
Goat Cheese
Avocado
1-2 Egg(s)
Salt and Pepper to taste

Mash avocado with a fork and add salt and pepper as wanted. Cook your egg(s) how you like them. Preheat broiler to high. Take a baking sheet and line with parchment paper. Put toast on a baking sheet, top with a small amount of harissa, and then spread mashed avocado on top. Top with sun-dried tomatoes and goat cheese. Put into broiler for only 1 or 2 minutes, being sure to watch to make sure it does not burn. Top the toast with your egg(s). Enjoy!

3. Cucumber and Hummus Avocado Toast (Vegan):

Bread of your choice
Olive Oil
Hummus (flavor of your choice)
A few cucumber slices
Avocado
Salt and Pepper to taste

Toast bread or cook on pan with olive oil and garlic. Mash avocado with a fork and add salt and pepper as wanted. Put avocado mash onto toast, then cucumbers on top, and drizzle olive oil to finish it. Top with salt and pepper to your liking. Enjoy!

4. Black Bean and Roasted Tomato Avocado Toast (Vegan):

Bread of your choice
Olive Oil
1/4 teaspoon of Cumin
Lime Juice
1/3 cup Canned Black Beans, rinsed
2 tablespoons Roasted Pepitas
A beefsteak tomato, cut into slices
Avocado
Salt and Pepper to taste

Preheat oven to 400°F. Take a baking sheet and line with parchment paper. Put tomato slices on baking sheet and drizzle with olive oil. Top with cumin, salt, and pepper as desired. Cook tomatoes for 15 minutes, then let cool.Toast bread or cook on pan with olive oil and garlic.  Mash avocado with a fork and sprinkle in lime juice, salt, and pepper as desired. Stir in black beans. Put avocado mash onto toast, then top with tomatoes. Sprinkle with pepitas and enjoy!
