Ingredients:

  • 1 large cauliflower, cut into florets
  • 3 Tbs coconut oil
  • 1 small onion, chopped
  • 2-3 cloves of garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 cup tomato paste (organic canned is fine)

Directions:

Grind cauliflower florets in food processor or in blender until they look like the consistency of regular rice.

Sauté onion & garlic in coconut oil for about 2 min.

Season with salt, pepper, paprika, cumin & paprika.

Add cauliflower & cook for another 2 minutes.

Add tomato paste & stir for an additional 2 min.
